Decadent Desserts Famous Coconut CakeOur Coconut cake was added to the roster a few years ago.  It was “discovered” quite by accident.  I had been working on just the right combination, and finally felt it was perfect: soft vanilla cake layers filled with coconut pastry cream, finished with cream cheese icing and fluffy coconut.   I made it early in the week, and the staff and I kept having another slice each day as the week went by, to see how it aged, and just to be sure.  Because of it’s buttery richness, it actually was better after a day or so, when the flavours had melded.  The coconut pastry cream soaked into the layers, creating cakey, creamy, coconut heaven.   The weekend came, and when my part-time Saturday person was ready to leave around 1:00 pm to go to her other job, I offered her the rest of the cake, as she comes from a large family.  She took it to the Cookbook Company, a foodie gathering spot in Calgary, and set it on the table behind the counter.  A while later a well-know restaurant critic walked in, saw it, and exclaimed, “oh my God, a coconut cake, I love coconut cake.”  She tasted it and called me immediately, raving about how delicious it was.  I was mortified.  This cake was now four or five days old, and certainly not how I would have wanted it presented to the media!  No matter.  She loved it and began ordering it and sharing it with her friends, and the “cult following” of our Coconut Cream cake was started.  It was featured in City Palate, with a description and photo, and we had a lot of traffic after that. We certainly have lots of other cakes that have their followers, but this one seems to make people a little crazy!

Old Fashioned Layer Cake
Give a new twist to an old “fav”. First choose the cake layers; buttery vanilla or intensely chocolate. Then choose the filling; ganache, ganache & caramel, ganache and raspberries, chocolate mousse, mousse and raspberries. The icing is ganache.

Chocolate Overdose
Almost two pounds of Callebaut chocolate in layers of truffle, mousse and ganache.

Chocolate Obsession
Smooth milk and dark Callebaut chocolate mousse, layered between chocolate cake, topped with ganache.

14 Karat Cake
Moist carrot cake with pineapple, walnuts and raisins throughout, decorated with hand-piped carrots.

Mocha Crunch Cake
Dark chocolate cake, almond crunch & mocha cream cheese icing, layered in our unique creation.
